Asparagus

Asparagus is abundant! I like it so many ways, in soups, pasta, curries, stir fried, and so on. Here is a really simple side dish I came up with recently. It is easy and the asparagus flavor shines.


Asparagus a la Orange

1-2 T olive oil
salt
1 bunch of asparagus, washed, dried, trimmed and cut into the size pieces you like (mine were about 3 to 4 inches long)
1 blood orange, halved, cut 2 thin slices from one of the halves

Heat the olive oil in a small frying pan over medium high heat. Add the asparagus, half of salt, and the 2 orange slices. Saute until asparagus is slightly browned in places, but still crispy. Squeeze the larger orange half into the pan, swirl a bit til it gets sticky. Serve with orange slices on the side.
