Strawberry Milk

glass of strawberry milk
I've been so bad about posting recipes, I keep making things and sharing photos, but no recipes follow. I have no excuse. This one is so easy and delicious. Be sure and use really ripe, fragrant strawberries. Tastes like ice cream or gelato (just had some strawberry gelato recently so I know what I'm talking about). If any of the ingredients are not ones you can consume, please find another recipe on-line or check the comments at Smitten Kitchen, which is where I found the recipe, for ideas on subs that work. Enjoy.

Strawberry Milk
1 pound strawberries, trimmed and sliced
1/2 cup granulated sugar, really don't cut back on the sugar
3 cups milk, use whole milk, just this once OK?
1 cup buttermilk, 2% is OK and don't leave it out as it gives thickness and you absolutely do not taste it

Put strawberries in a bowl with the sugar. Stir and let sit on the counter for an hour or so. You need juice, so let it sit as long as it takes to get some juices going. Blend the strawberries and sugar. I used my immersion blender and it worked fine. Blend til there are no more chunks. Combine strawberries and the 2 milks. Stir well. Place in the refrigerator and let the flavors meld overnight. Next morning enjoy. It is thick, creamy, lightly sweet and so delicious.
